Semi-cooked paste cheese obtained from heat-treated whole goat’s milk; the interior is white, with small sparse eyes. The rind is smooth, of light brown colour.
Highly digestible cheese, with great nutritional value (see below). Excellent as a second course, or to round off a meal. It makes a nice grating cheese for those who appreciate a strong, tangy condiment on their pasta or soup.
