Semi-cooked cheese obtained from whole sheep’s milk with negligible bacterial content. Produced by an italian dairy farm. The interior is compact, fine-grained, and can be broken off in flakes. It tends to ‘dissolve’ on the tongue, and has the typical strong flavour of mature "pecorino" cheese. Excellent as a table cheese, whether during or at the end of meals, and for grating.
